A lively guacamole

Ingredients
• 1/4-1/3 Cup finely chopped Vidalia onion
• 2 Large (very ripe) avacados
• 2 vine ripe tomatoes, diced
• 1/4 cup chopped cilantro
• Juice from one lime
• 1 large clove of garlic, pressed or chopped
• 1 jalapeno, finely chopped
• 1/3 bottle or green tobasco sauce
• Salt and pepper to taste
• 1 bag blue corn tortilla chips

Instructions
• Prepare all ingredients, keeping them separate, before opening the avacados.
• Once your ingredients are ready, scoop out the flesh of avacados and place it into a large mixing bowl. Discard the skin and the pit. Do NOT mash the avacado at this time because it is very easy to over-mix and you want to preserve some chunkiness. It is important that the guac is not too smooth.
• With a fork, begin mashing/stirring all the ingredients together. Add all the ingredients at the same time. I usually eyeball the amounts of everything so they may not be exact. Use your best judgement on how much to use, specifically with the onion. You may not need the whole 1/3 C. I think the amounts I listed above are very close to what they should be.
• If you feel that you need more of something you can always add it, just be careful not to over mix.
• Once everything is mixed, cover bowl and place in fridge until you are ready to eat. I would try to wait about 30-45 min though, so the flavors have some time to blend.

Notes
• The lime helps the guac not to brown, so don't switch it for a lemon or leave it out.
• You can tell an avacado is ripe by squeezing it. It should be a little mushy. If it is too hard, it will be very hard to mash. If it is too ripe, it will be very mushy and the flesh will have a lot of brown spots.
• It is a bit spicy so if you are a wimp (or have a nina), don't use the entire jalapeno.
• You can use other types of tomatoes or onions, but do not use red onions because they are very overpowering.
• This makes a pretty substantial amount so if you are only cooking for two, you may want to cut the recipe in half. Otherwise, you will have leftovers.
